Almost daily I hear or read about someone who has realized that they are gluten sensitive or thinks they may be. Today, I want to give a book review. This is a book for the gluten-free peeps, but not the nut free.
The Gluten-Free Almond Flour Cookbook by Elana Amsterdam from www.elanaspantry.com. I began following Elana about 5 years ago when my son was having issues spitting up. The doctor gave him two kinds of medicine and I had to stop nursing and supplement because he couldn’t keep enough down. So I began doing lots of research. I started at Dr. Mercola’s website. I started thinking more about prevention instead of just treatment.
We started using honey to replace sugar. Pastas were gone. Breads were gone unless I used coconut or almond flour. Coconut flour didn’t last long. My husband says it is like swallowing a sponge. And I have to agree that in most of my cooking with it, that’s pretty much what it was like. I started cooking my son’s food myself and mashing it instead of buying the jarred baby food. Have you checked the labels on those little jars?
In my pursuit of healthy food for my family, I stumbled upon Elana’s website. I’m not sure if I made many of her recipes back then, but I visited her site often. My son’s first birthday cake was actually a cake from her blog. He’s 5 now
As my son’s health improved (which it completely did), we gradually went back to our old way of eating. But now that I am back on the road to healthy living, and this time for good, I am also back to Elana’s Pantry. We have eaten, very happily, many of the recipes from her blog. And earlier this year I finally bought The Gluten-Free Almond Flour Cookbook. I make her recipes often and have made some of them my own by adapting them. Some of our favorites are her Pancakes, Cinnamon Apple Muffins, Chicken Fingers, and Kale Tart with Cranberries.
Her chocolate cake has become our go to cake. We made it to sell at our homeschool fundraiser. We made it for both my kids’ birthdays. And boy was I a happy chocolate almond flour cake eater here.
